I
wondered whether salmon and coconut milk could go well together. The answer is yes. Some
vegetables, spinach pasta, and good to go.
This was the evening I also tried
home-made smoked tuna. And here is another twist to it: home-made smoked tuna
with mint. Yes, mint.
The technique to smoke fish at home was
learnt at a workshop/seminar about the upcoming EU’s Common Fisheries Policy,
during the European Fish Week in Lisbon (also here), on the World Oceans Day. This was an
event organized by OCEAN2012. There was a chef teaching some alternative
recipes to try with more sustainable aquatic resources, such as sardines and
anchovies.
“OCEAN2012 is an alliance of organizations
dedicated to transforming European fisheries policy to stop overfishing, end
destructive fishing practices and deliver fair and equitable use of healthy
fish stocks.”
So,
even if I seem to be wandering, keep in mind that I do focus on
sustainability! There is always a better approach, or, at least, an optimal.
